Nose: intense and aromatic with flavour of incense and predominant floral over fruity notes. Hints of jasmine and geranium, zesty apple and yellow peach, the nose is particularly delicate and elegant
Taste: soft, sweet notes followed by delicate hints of fruits and citrus; balanced, harmonious with a long and persistent (slightly bitter) nose-palate finish
Serve with: raw fish and carpaccio, oysters, anchovies with salt-butter, spicy white pasta dishes and truffle dishes, blue fish (anchovies, sardines, mackerel), dried cod, seafood, fish and vegetable tempura, cheeses with unwashed rinds, goat's cheeses, blue cheeses and custard tarts
